Fruity Quinoa Salad
Fruits find a home in quinoa for an amazing and dazzling fruit salad. Add your favorite fruits and toss in nuts, if desired.

Ingredients
  • 1/2cup quinoarinsed and drained well
  • 1cup water
  • 2/3cup diced peeled cucumber
  • 1/2cup chopped red onion
  • 2/3cup fresh blueberries
  • 2/3cup cubed mango
  • 1(11-ounce) can mandarin orangesdrained and reserve 3 tablespoons juice
  • 1tablespoon canola oil
  • 1tablespoon lemon juice
  • Dash cayenne
  • salt and pepper to taste
Instructions
  1. In medium pot, combine quinoa and water. Bring to boil, cover, and reduce heat. Simmer 10-15 minutes. Cool completely.

  2. In large bowl, combine quinoa, cucumber, onion, blueberries, mango and oranges.

  3. In small bowl, whisk oil, reserved 3 tablespoons orange juice, lemon juice, cayenne and season to taste. Toss with salad.In medium pot, combine quinoa and water. Bring to boil, cover, and reduce heat. Simmer 10-15 minutes. Cool completely.
