Light Lemon Angel Hair

Ingredients
  • 8ounces angel hair pasta
  • 1/2teaspoon minced garlic
  • 2tablespoons olive oil
  • 3tablespoons lemon juice
  • 1 1/2teaspoons grated lemon rindoptional
  • 1/3cup chopped parsley
  • salt and pepper to taste
Instructions
  1. Cook pasta according to package directions, reserving 1/4 cup cooking water; drain well and set aside. Transfer pasta to large serving dish.
  2. Add remaining ingredients to pasta including reserved 1/4 cup cooking water; toss until well combined. Serve warm or at room temperature.
