Meat Sauce Bolognese
The term “Bolognese” means a thick, full-bodied meat sauce with vegetables enhanced with wine or milk—I have used both to create my husband’s favorite meat sauce.

Ingredients
  • 2/3cup chopped carrots
  • 2/3cup chopped celery
  • 1 onionchopped
  • 2tablespoons minced garlic
  • 2pounds ground sirloin
  • 1 can tomato paste6-ounce
  • 1 can fat-free beef broth14-ounce
  • 1cup red wine
  • 1in can diced roasted tomatoesjuice14 1/2-ounce
  • 1teaspoon dried basil leaves
  • 1teaspoon dried oregano leaves
  • 1cup skim milk
Instructions
  1. In large nonstick skillet, cook carrots, celery, onion, and garlic and sauté 7 minutes or until tender. Add meat, stirring until brown.
  2. Add tomato paste, beef broth, red wine, tomatoes, basil, and oregano. Bring to boil and cook 5 minutes. Add milk and continue cooking over low heat 20-30 minutes.
