Peach Crisp
Use fresh or frozen peaches for this luscious cobbler with an oatmeal crumbly topping.

Ingredients
  • 1 package frozen peachesthawed, 16-ounce
  • 1tablespoon cornstarch
  • 2tablespoons sugar
  • 1tablespoon lemon juice
  • 2tablespoons butter
  • 2tablespoons light brown sugar
  • 1teaspoon vanilla extract
  • 1/3cup all-purpose flour
  • 1/2teaspoon ground cinnamon
  • 1/8teaspoon baking soda
  • 3/4cup old-fashioned oatmeal
Instructions
  1. Preheat oven 350ºF.
  2. Lay fruit in oblong 2-quart baking dish.
  3. In small bowl, mix together cornstarch and sugar. Toss cornstarch mixture and lemon juice with peaches in baking dish.
  4. In medium bowl, mix together butter, brown sugar, and vanilla. In small bowl, stir together flour, cinnamon and baking soda, and mix with oatmeal and butter mixture until crumbly. Sprinkle on top peaches.
  5. Bake 45 minutes, or until topping is brown and mixture is bubbly. Serve immediately.
