Pesto Potatoes
Probably the easiest potato dish and best potato dish ever. Three-ingredient amazing crispy oven roasted potatoes tossed with pesto and Parmesan cheese.

Ingredients
  • 2pounds red potatoesquartered
  • 2tablespoons basil pestofound in jar
  • salt and pepper to taste
  • 3tablespoons grated Parmesan cheese

Instructions
  1. Preheat oven 400°F. Line baking pan with foil and coat with nonstick cooking spray.
  2. In large bowl, toss potatoes and pesto. Transfer potatoes to prepared pan. Season to taste.
  3. Roast 25-35 minutes (depending on size) or until crisp tender. Sprinkle with Parmesan cheese evenly over the potatoes. Continue roasting another 3-5 minutes or until cheese is melted.
