Ranger Cookies
I received a request for a healthier take on this popular cookie recipe made with oatmeal, cereal, and coconut so see if you can even tell the difference!
Servings 48 cookies
Ingredients
  • 1/3 cup canola oil
  • 3/4 cup light brown sugar
  • 1/3 cup sugar
  • 1 egg
  • 1 egg white
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 cups old-fashioned oatmeal
  • 1 1/2 cups crisp rice cereal
  • 1/3 cup flaked coconut
Servings 48 cookies
Ingredients
  • 1/3 cup canola oil

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda

  • 1 1/2 cups crisp rice cereal
  • 1/3 cup flaked coconut
Instructions
  1. Preheat oven to 350ºF.
  2. In a mixing bowl, blend together the oil, brown sugar, and sugar. Add the egg, egg white, and vanilla, and mix well.
  3. In another bowl, combine the flour and baking soda and gradually add to the sugar mixture. Stir in the oatmeal, cereal, and coconut.
  4. Place tablespoonfuls of mixture on a baking sheet coated with nonstick cooking spray. Bake for 10–12 minutes or until lightly brown around edges.
