Roasted Peppers and Sausage Recipe
Roasted antioxidant-rich bell peppers pack a powerful punch when combined with sausage for a high scoring delicious roasted sausage peppers recipe. The recipe is gluten-free without pasta.
Ingredients
  • 6cups assorted bell pepperscored and cut into small squares
  • 1cup chopped onion
  • 1tablespoon minced garlic
  • 1pound turkey sausage
  • 114 1/2-ounce can fire roasted tomatoes
  • 2cups fat-free chicken broth
  • 1tablespoon dried basil leaves
  • 4cups fresh baby spinach
Instructions
  1. Preheat oven 425°F. Coat baking pan with foil and nonstick cooking spray.
  2. Spread peppers evenly on foil lined pan and bake 30-40 minutes until tender and lightly browned.
  3. Meanwhile, in large nonstick skillet cook onion, garlic and sausage until sausage is done, about 5-7 minutes. Add tomatoes, roasted peppers, broth and basil.
  4. Bring to boil, lower heat and cook about 10 minutes. Add spinach and stir until wilted.

Terrific Tip: For the turkey sausage, you can substitute ground turkey, ground sirloin or Italian Chicken Sausage.

Serving Suggestion: I served it over pasta but you can serve over couscous, quinoa or rice.
