Salmon with Spinach Feta Stuffing

Salmon with Spinach Feta Stuffing
This simple and superb stuffed salmon recipe is impressive to eat, and has become one of everyone’s favorites. Oven baked salmon recipes are one of my top easy 5 ingredient recipes and makes a quick romantic dinner. Yes, you can have one of the best heart healthy foods as a romantic rendezvous meal in your own home so I couldn't wait to share on my healthy food blog.
Servings 4 servings
Ingredients
  • 2 ounces reduced-fat cream cheese
  • 1/2 cup reduced-fat feta cheese crumbled
  • 1/3 cup red onion chopped
  • 1/2 cup baby spinach chopped
  • 4 6-ounce salmon fillets

  • 2 ounces reduced-fat cream cheese
  • 1/2 cup reduced-fat feta cheese crumbled
  • 1/3 cup red onion chopped
  • 1/2 cup baby spinach chopped
  • 4 6-ounce salmon fillets
Instructions
  1. Preheat oven 350°F. Coat baking dish with nonstick cooking spray.
  2. In bowl, combine cream cheese and feta with fork, mixing until blended. Add onion and spinach, combining well.
  3. Split each piece of salmon in half lengthwise without cutting all the way through (make pocket). Divide filling in each fillet spreading to cover. Place top salmon piece back over filling and on prepared baking dish. Bake 20 minutes or until flaky and done.
