Ingredients
  • 1 egg
  • 1 egg white
  • salt and pepper to taste
  • English muffin halftry whole-wheat when tolerated
  • 1tablespoon reduced-fat shredded Cheddar cheese
Instructions
  1. Preheat oven 350°F.
  2. In small bowl, whisk together egg and egg white. In nonstick skillet coated with nonstick cooking spray, scramble eggs until done. Season to taste.
  3. Carefully spoon egg mixture onto top of mu n half. Sprinkle with cheese.
  4. Place muffin on nonstick baking sheet. Bake 5 minutes or until heated and cheese melted.
