Simple Baked Chicken
Tender chicken with gravy (tastes like chicken soup) makes a very comforting flavorsome meal.  Be sure to serve with rice to soak up the last drop of gravy. This is a comforting food easy to tolerate for a chemotherapy diet.  From the Day of Chemo Chapter.

Ingredients
  • 1 1/2lb chicken breast tenders
  • 1/4cup biscuit baking mix
  • 1tbsp olive oil
  • 1tsp garlicminced
  • 1tbsp all-purpose flour
  • 116-ounce can low-sodium fat-free chicken broth
Instructions
  1. Preheat oven 375°F. Coat 3-quart oblong baking dish with nonstick cooking spray.
  2. Coat chicken in baking mix and place in prepared dish. Bake 40 minutes.
  3. In small nonstick pot combine oil and garlic, and add flour. Whisk in chicken broth, bring to boil, and cook until slightly thickened. Pour over chicken, cover with foil, and continue baking another 20-30 minutes or until chicken is done.
