Ingredients
  • 1tablespoon olive oil
  • 1pound fresh or frozen cut okra
  • 1cup corn
  • 1 can diced tomatoes and green chilies10-ounce
  • 1 can white navy beansrinsed and drained, 15-ounce
  • salt and pepper to taste
Instructions
  1. In nonstick skillet, heat oil over medium heat and stir-fry okra several minutes. Add remaining ingredients and mix well.
  2. Cook, covered, over low heat 15 minutes or until okra is tender and stir occasionally. Season to taste.
