Southwestern Crawfish Cups
Won tons, found in the produce section, filled with a festive flavorful crawfish mixture make impressive party pick-ups. To make ahead, bake the won ton cups, make the filling and refrigerate until ready to put together.

Ingredients
  • 5 dozen won ton wrapssquares
  • 2cups shreddedreduced-fat Mexican-blend cheese
  • 2cups crawfish tailsrinsed and drained
  • 1cup chopped roasted red pepperdrained (found in jar)
  • 1 can Mexicorndrained, 11-ounce
  • 1 can chopped green chiliesdrained, 4-ounce
  • 1/2teaspoon chili powder
  • 1/2cup chopped green onions
Instructions
  1. Preheat oven 350°F. Coat mini muffin pans with nonstick cooking spray.
  2. Press a won ton wrap into each muffin cup. Bake 6–7 minutes or until lightly golden brown.
  3. In bowl, combine remaining ingredients. Divide crawfish mixture evenly into won tons. Return pan to oven and continue baking 6–8 minutes or until cheese is melted.
