Strawberry Bread
Strawberries with a touch of lemon combine together for the best berry bread. Any red fruit juice may be used for cranberry-strawberry juice.

Ingredients
  • 2cups all-purpose flour
  • 3/4cup sugar
  • 1 1/2teaspoons baking powder
  • 1/2teaspoon baking soda
  • 1 egg
  • 1 egg white
  • 1/3cup buttermelted
  • 1/3cup cranberry-strawberry juice
  • 2teaspoons grated lemon rind
  • 1 1/2cups strawberrieshulled and coarsely chopped
Instructions
  1. Preheat oven 350o F. Coat 9x5x3-inch nonstick loaf pan with nonstick cooking spray.
  2. In large bowl, mix together flour, sugar, baking powder, and baking soda. In small bowl, whisk egg and egg white. Stir in melted butter, juice, and lemon rind.
  3. Add to flour mixture, stirring until well combined. Stir in strawberries. Transfer batter to prepared pan.
  4. Bake 50-60 minutes, or until toothpick inserted in center comes out clean; cover loosely with foil if it browns too fast.
