Sweet Potato Chili

Ingredients
  • 4cups sweet potato chunksabout 2-inch chunks and 1 3/4 pounds
  • 1 onionchopped
  • 1tsp garlicminced
  • 1(15-ounce) can dark red kidney beansrinsed and drained
  • 1 red bell peppercored and chopped
  • 1(14 1/2 ounce) can fire roasted diced tomatoes
  • 2tbsp chili powder
  • 1tsp ground cumin
  • 1 1/2tsp paprika
  • 1cup water or vegetable broth
  • 1/2cup orange juice or water
Instructions
  1. In 3 ½-6-quart slow cooker, insert plastic liner if desired, and add all ingredients to pot. Cook on LOW 6-8 hours, or until sweet potatoes are is tender.

Terrific Tip: Make this even easier by cutting up the vegetables the night before and have them ready to go in the morning. Cut slow-cooking vegetables, such as carrots, into small pieces. Cut quick-cooking vegetables, such as zucchini and sweet peppers, into bigger pieces.
