Sweet Potato Cornbread is Soup’s Perfect Pair

Cooler weather means soup season is here and with soup I love to make my Sweet Potato Cornbread from KITCHEN 101 cookbook. This corn bread recipe pairs perfectly with savory warm soups. Warm and inviting pots of soups, stews, and chili’s are often found simmering on the stove – and really are the perfect one-pot meal this time of year. But for a little something extra try serving them with this scrumptious easy cornbread recipe to soak up the last drop from your bowl!

Sweet Potato Cornbread
Fresh or canned sweet potatoes may be used. With a cornbread mix and a can of sweet potatoes, you can whip up this cornbread in minutes.
Prep Time 5 minutes 
Cook Time 20 minutes 
Servings 12 squares
Ingredients
  • 1 6-ounce package yellow cornbread mix
  • 2 tablespoons sugar
  • 1/2 teaspoon ground cinnamon
  • 2/3 cup skim milk
  • 1 egg beaten
  • 1/2 cup cooked mashed sweet potatoes
Prep Time 5 minutes 
Cook Time 20 minutes 
Servings 12 squares
Ingredients
  • 1 6-ounce package yellow cornbread mix
  • 2 tablespoons sugar
  • 1/2 teaspoon ground cinnamon
  • 2/3 cup skim milk
  • 1 egg beaten
  • 1/2 cup cooked mashed sweet potatoes
Instructions
  1. Preheat oven 400˚F. Coat 8x8x2-inch pan coated with nonstick cooking spray.
  2. In bowl, combine cornbread mix, sugar, and cinnamon. Stir in remaining ingredients, mixing until moistened; don’t over mix.
  3. Transfer batter into prepared pan. Bake 20 minutes or until top is golden brown.

Terrific Tip: If recipe calls for canned sweet potatoes, fresh cooked sweet potatoes may be used. 1 (15-ounce) can sweet potatoes (yams) drained and mashed=1 cup.

Serving Suggestion: Make in cupcake holders for individual servings.
