Italian Cuisine is All-Time Favorite Meal

Rich and robust in flavor, Holly created her own homemade Italian style dishes to satisfy her craving and of course always keeping them trim and terrific! Pesto is a creamy blend of pine nuts, basil, parmesan with a touch of sea salt and olive oil – talk about good! But don’t let pesto intimidate you! Pesto Shrimp from Guy’s Guide to Eating Well cookbook uses jarred pesto for the ultimate in fresh + convenience = homemade! You will love the savory flavor pesto adds to shrimp and nothing beats the ease and effortlessness of keeping a jar on hand.

Pesto Shrimp
Perk up shrimp with pesto and tomatoes for a quick, insanely amazing meal. Keep a jar of pesto sauce in your refrigerator for the best recipe shortcut! Diabetic-friendly, Gluten-free, Freezer-friendly
Prep Time 5 minutes
Cook Time 15 minutes
Servings 4 servings
Ingredients
  • 1 pound peeled medium shrimp
  • 1 tablespoon basil pesto from jar
  • 1 tablespoon olive oil
  • 1 pint cherry or Heirloom assorted tomatoes
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon olive oil
  • 1 pint cherry or Heirloom assorted tomatoes
  • 1/4 teaspoon red pepper flakes
Prep Time 5 minutes
Cook Time 15 minutes

Ingredients
  • 1 pound peeled medium shrimp

Instructions
  1. Season shrimp to taste. In nonstick pan coated with nonstick cooking spray, heat pan and add shrimp cooking until done, about 5 minutes.
  2. Toss with pesto and remove from heat.
  3. Meanwhile, in another nonstick pan, heat olive oil. Add tomatoes, salt and pepper, and red pepper flakes, cooking until tomatoes begin to burst, smashing slightly while cooking, about 5-7 minutes. Add to shrimp.

Serving Suggestion: Serve savory seasoned Pesto shrimp over polenta, pasta or rice or with toothpicks as an appetizer.

Terrific Tip: A jar of Basil Pesto is one of my favorite shortcuts. Try my White Spinach and Artichoke Pesto Pizza (page 22) or Pesto Potatoes (page 138). Basil Pesto quickly will become a favorite ingredient to toss into recipes for quick Italian flavor.

Pesto Shrimp from Fix It Fast Chapter In Men’s Cookbook
