- 4 cups sweet potato chunks about 2-inch chunks and 1 3/4 pounds
- 1 onion chopped
- 1 tsp garlic minced
- 1 (15-ounce) can dark red kidney beans rinsed and drained
- 1 red bell pepper cored and chopped
- 1 (14 1/2 ounce) can fire roasted diced tomatoes
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 1/2 tsp paprika
- 1 cup water or vegetable broth
- 1/2 cup orange juice or water
