Easy Chicken and Dumplings
With rotisserie chicken, canned broth and drop Bisquick dumplings, my healthy Chicken and Dumplings recipe becomes an effortless one-dish meal! Servings 8 (1 cup) servings
Ingredients
  • 1 onion chopped
  • 1 1/2 cups baby carrots
  • 1/2 teaspoon minced garlic
  • 1/4 cup all-purpose flour
  • 6 cups fat-free chicken broth divided
  • 1/2 teaspoon dried thyme leaves
  • 2 cups chopped skinless rotisserie chicken breast
  • 2 cups biscuit baking mix
  • 2/3 cup skim milk

Ingredients
  • 1 onion chopped
  • 1 1/2 cups baby carrots
  • 1/2 teaspoon minced garlic
  • 1/4 cup all-purpose flour
  • 6 cups fat-free chicken broth divided
  • 1/2 teaspoon dried thyme leaves
  • 2 cups chopped skinless rotisserie chicken breast
  • 2 cups biscuit baking mix
  • 2/3 cup skim milk
Instructions
  1. In large nonstick pot coated with nonstick cooking spray, sauté onion, carrots, and garlic over medium heat until tender.

  2. In small cup, stir flour and 1/3 cup  broth, mixing until smooth. Gradually add flour mixture and remaining broth to pot; bring to boil. Add thyme and chicken.

  3. In bowl, stir together biscuit baking mix and milk. Drop the mixture by spoonfuls into boiling broth.

  4. Return to boil, reduce heat, and cook, covered, carefully stirring occasionally, 15-20 minutes or until dumplings are done. Season to taste. If soup is too thick, add more broth.

Terrific Tip: Another short-cut for dumplings: cut flaky biscuits into fourths and drop into boiling broth or you can even use flour tortillas cut into fourths. You can slice carrots — but I find baby carrots a time-saver.

From Holly’s Personal Account of Tube Feeding After Gastrectomy

“My portions have to be small and I can only eat about 1/2 cup or I feel uncomfortable and full. Because I have stomach cancer, my stomach isn’t working.  I have had three chemo treatments so they said I could try eggs, ground beef, rice, tortilla, chicken, pasta and and soup.  Most importantly, everything needs to be very low in fiber and fat since my stomach still isn’t working well. If I can eat 300 calories and 13g of protein during the day, I can now skip my 2.5 hour day time feed. The calories are easy to hit but getting enough protein is challenging.  I’m stuck with my 10.5 hr overnight feeding – for now!”

How To Add Protein And Adapt Holly’s Homemade Chicken And Dumplings Recipe

homemade chicken and dumplings“Today, I decided I would make my Chicken and Dumplings with Bisquick because it is hard to beat simple southern comfort food.  This Quick Chicken and Dumplings recipe is in Eating Well Through Cancer in the Day of Chemo Chapter.  Light, quick to make and easy to tolerate. I adapted the recipe to my needs. I left out the carrots and onion and used a little garlic powder (I can’t have fiber).   Then, I bought chicken stock instead of chicken broth because chicken stock has five times the amount of protein. I am not a bone broth fan but bone broth even has more protein. I bought shredded rotisserie white meat chicken so talk about easy to make!”

Chicken and Dumplings with Bisquick From Eating Well Through Cancer Cookbook

In Eating Well Through Cancer cookbook, Holly highlights diabetic recipes.  Easy Chicken and Dumpling recipe is diabetic-friendly (if use reduced sodium chicken broth) making it the ideal low fat choice. Ironically, Holly has guided people through this book for over 15 years and she turned to her cancer cookbook to help guide her through her cancer journey.

She often made the Easy Potato Soup from the cancer cookbook and ate it with a dollop of Greek yogurt for an extra dose of protein. She also added extra protein powder to help meet her protein goals.

Homemade Chicken and Dumplings Recipe Hard To Beat

What’s great about this recipe is that it served everyone for dinner and everyone was excited about getting my homemade chicken and dumplings recipe.  Whether you have cancer or don’t feel well, this recipe is so easy to make as basically I used rotisserie chicken, broth and Bisquick for this quick chicken and dumplings.  With a little thyme and garlic powder, I didn’t even miss the onions and fresh garlic.  I ate a little more than my 1/2 cup because it was so good and I did OK which was encouraging.  Now, I can’t wait to have another bowl tomorrow!

Made My Protein For The Day with My Quick Chicken and Dumplings

Remember, I used the chicken stock instead of chicken broth for added protein and chicken is a good source of protein.  This morning I started my day with a scrambled egg mixed with Greek yogurt.  Later, I ate cottage cheese and I sure didn’t know 1/2 cup cottage cheese had 13 g of protein.  Then, the day ended with one of my favorite recipes, my Chicken and Dumplings with Bisquick.  So, the white food all day wasn’t so bad today and besides, I got to eat.  As I go to bed tonight I am hooked up to my feeding tube for the next 10 1/2 hours.  My hope is I continue to eat more and get to use the feeding tube less.  Next week at chemo, I will be half done!

Use Chicken Stock For Added Protein in Your Soup

Here’s the chicken stock I used in the easy Chicken and Dumplings recipe. You can get it low-sodium to keep the recipe diabetic.

This has five times the amount of protein and I think it actually enhances the flavor of the soup. See what you think and you can always use bone broth which is a great source of protein.  I just don’t like the flavor of bone broth but it is very good for you.
