- 1 cup old-fashioned oatmeal
- 1/3 cup toasted coconut flakes
- 1/2 cup peanut butter
- 1/2 cup ground flaxseed
- 1/2 cup semisweet chocolate chips optional
- 1/3 cup honey
- 1 teaspoon vanilla extract
Ingredients

- In medium bowl, stir together all ingredients until thoroughly mixed. Let chill in refrigerator 30 minutes.
- Once chilled, roll into heaping teaspoon-size balls. Store in an airtight container and refrigerate up to 1 week.
