Must Have Fresh Crunchy Salty Summer Side Salad Recipe

Talk about a twist on sliced fresh cucumbers! Holly turned a classic, popular side dish into a refreshing Cucumber, Mint and Feta Salad. This stellar and simple recipe is from the Ready Made Menu chapter from KITCHEN 101: Secrets to Cooking Confidence. This light salad perfectly accompaniments any entrée dish including chicken, seafood and grilled red meat. With temperatures rising, this vegetarian & diabetic friendly side dish provides just the cooling crunch all your Summer meals need.

Cucumber, Mint and Feta Salad
Turn cucumbers into this refreshing flavor combination.
Servings 4 (3/4 cup) servings
Ingredients
  • 3 cups thinly sliced peeled cucumber
  • 1/4 cup crumbled reduced-fat feta
  • 1/4 cup seasoned rice vinegar
  • 1 tablespoon olive oil
  • 3 tablespoons chopped green onion
  • 3 tablespoons fresh chopped mint
  • 2 tablespoons pine nuts toasted
  • salt and pepper to taste
Servings 4 (3/4 cup) servings

Instructions
  1. In bowl, combine cucumber and feta.
  2. In small bowl, whisk together vinegar, oil and green onion. Toss with cucumber and feta. Add mint and pine nuts. Season to taste.

Terrific Tip: This is one time fresh mint makes a difference. Pine nuts are pricey so if you don’t want to use them, just leave them out.
