You may not necessarily consider yourself superstitious, but don’t you just love New Year dinner traditions?! New Year’s Day recipes are so delicious and this Black Eyed Pea Salad recipe from Holly Clegg’s Guy’s Guide to Eating Well cookbook is a favorite. The tradition of eating black eyed peas on the first day of the year is because they enlarge when cooked so they symbolize prosperity.

Black Eyed Pea and Wild Rice Salad
Fresh plus convenience equals homemade when it comes to this nutrition-packed savory salad with a balsamic-Dijon vinaigrette.
Prep Time 15 minutes
Cook Time 20 minutes
Servings 6 (1 cup) servings
Ingredients
  • 1 package long grain and wild rice 4.5-ounce
  • 1 bunch chopped green onions
  • 1 red bell pepper cored and chopped
  • 3 tablespoons olive oil
  • 1 green bell pepper cored and chopped
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon minced garlic
  • 3 tablespoons balsamic vinegar
  • 1 cans black-eyed peas rinsed and drained, 15-ounce
  • 1 tablespoon dijon mustard
  • 2 tablespoons chopped jalapeno peppers
Prep Time 15 minutes
Cook Time 20 minutes
Servings 6 (1 cup) servings
Ingredients
  • 1 package long grain and wild rice 4.5-ounce

Instructions
  1. Cook wild rice according to package directions. Cool.
  2. In large bowl, combine wild rice with remaining ingredients.
  3. Whisk together olive oil, balsamic vinegar, Dijon mustard and jalapeno.
  4. Toss with rice mixture and vinaigrette mixing well. Refrigerate until serving.
