- 1 package long grain and wild rice 4.5-ounce
- 1 bunch chopped green onions
- 1 red bell pepper cored and chopped
- 3 tablespoons olive oil
- 1 green bell pepper cored and chopped
- 1/4 cup chopped fresh parsley
- 1 teaspoon minced garlic
- 3 tablespoons balsamic vinegar
- 1 cans black-eyed peas rinsed and drained, 15-ounce
- 1 tablespoon dijon mustard
- 2 tablespoons chopped jalapeno peppers
Ingredients

- Cook wild rice according to package directions. Cool.
- In large bowl, combine wild rice with remaining ingredients.
- Whisk together olive oil, balsamic vinegar, Dijon mustard and jalapeno.
- Toss with rice mixture and vinaigrette mixing well. Refrigerate until serving.
