Healthy Chicken Nachos Make Amazing Chicken Nachos Recipe
I am such a fan of this popular junk food. When I was testing recipes for my men’s health cookbook, Guy’s Guide To Eating Well, I wanted to include a healthy chicken nachos recipe. I started thinking about how to give you that wonderful nacho filling but using another option instead of chips. So, this chicken bell pepper recipe knocked it out of the park and are gluten free nachos! I also made Macho Nachos (with meat) and this shredded chicken nachos. Both were fabulous so I included the meat version and my chicken nachos recipe in the book!
Shredded Chicken Nachos Made Easily With A Few Ingredients
Nutritious and delicious recipe for healthy chicken nachos! Whip up this appetizer recipe easily with your favorite salsa, reduced -fat cheese, beans and rotisserie chicken. The filling can be made ahead of time and kept in the refrigerator to make the shredded chicken nachos when ready to eat. Remember to rinse and drain your beans to reduce the sodium. Simple and scrumptious!

Servings 4 (1/2-cup) servings |
- 1 1/2 cups shredded cooked chicken breast skin removed, rotisserie
- 2 teaspoons chili powder
- 1/2 cup black beans drained and rinsed
- 1/2 cup salsa
- 2 colored bell pepper cored and cut into squares (about 12-16 per pepper)
- 1/2 cup shredded reduced-fat Mexican blend cheese blend
Ingredients

- Preheat oven 350°F. Coat baking pan with nonstick cooking spray.
- In bowl, combine chicken, chili powder black beans and salsa.
- Arrange pepper squares on baking pan. Fill with filling and sprinkle with cheese evenly over the peppers. Bake 20 minutes or until peppers crisp tender.

Shredded Chicken Nachos Too Good To Be True
For this book I tested both beef and chicken nachos versions and loved both. So, I included both versions in the men’s cookbook. Macho Nachos (beef version) is a little different, but equally as good! if you don’t think you like bell peppers you’ll still like this chicken bell pepper recipe. I had a friend (guy) at my house as a taste tester. He surprised himself that he LOVED these healthy chicken nachos. He said the red and yellow peppers were milder in flavor and even though he thought he wasn’t a bell pepper fan, he kept asking for more and more!
Loaded Nachos Make Best Appetizer (or Meal)
I love nachos and have lots of recipes for them. My Crabmeat Nachos from Gulf Coast Favorites smothered in a crab cheese sauce have been so popular. Then, no one could resist my Crawfish Gumbo Nachos with all the gumbo ingredients topped on chips. The Meaty Pita Nachos with beef with Mediterranean flavors topped with feta served on pita chips makes a winning combination. I know men like nachos as much as I do and both these recipes are in my dynamic and easy men’s cookbook.
Line You Pan with Non-Stick Foil For Easy Clean Up
I always line my baking pan with foil for easy clean up. I think this nonstick foil makes a great option for cooking. The shredded chicken nachos don’t stick. Best of all, when the shredded chicken nachos are done, they come easily off the pan.
One less pan to wash because you toss away the foil after using! If you’ve never sen the nonstick foil, I wanted to share it with you to check out.
Turn Your Chicken Nacho Recipes Into Festive Gluten Free Nachos
You can use an assortment of colored bell peppers and I decided for the Christmas holiday season to use red and green peppers. For Valentine’s day go with red bell peppers and for St. Patrick’s Day use green. This is a fun appetizer and everyone is surprised how tasty they are. I’ve used bell pepper as chips for dips and now they hold my nachos for a low carb option and gluten free option. The men’s cookbook has a “G” to highlight gluten free options throughout the book.
