Chicken Pesto Pasta
Tempt your taste buds with this alluring one-dish meal recipe guaranteed to score high on your list. Forget the long ingredient list because it’s mainly for the pesto.

Ingredients
  • 1 1/2 pounds boneless, skinless chicken breasts cut into strips
  • 1 onion chopped
  • 1 package penne pasta 16-ounce
  • 1/2 cup packed fresh parsley leaves
  • 1/2 cup packed fresh basil leaves
  • 3 cloves garlic
  • 3 tablespoons olive oil
  • 2 tablespoons water
  • 1 tablespoon pine nuts
  • 1 cup fat-free chicken broth
  • 1/2 cup sun-dried tomatoes
  • 1/3 cup sliced black kalamata olives
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons water
  • 1 tablespoon pine nuts

Instructions
  1. In a large nonstick skillet, sauté chicken about 5 minutes until browned; add onion and continue cooking until chicken is done.
  2. Meanwhile, cook pasta according to package directions, drain and set aside.
  3. In food processor, process parsley, basil, garlic and pine nuts until combined. With processor still running, add olive oil in a thin stream and continue processing until smooth and creamy. Add water gradually.
  4. Add pesto mixture and broth to chicken, cooking and stirring until well heated. Add pasta, sun-dried tomatoes, olives and cheese.
