Savory Crock Pot Breakfast Casserole
Nothing says comfort food better than this Breakfast Casserole from Holly Clegg’s Crock Pot Convenience Chapter in KITCHEN 101 – the perfect blend of savory brunch flavors! Wake up and let this cheesy, hearty crock-pot breakfast cook itself. Slow cooker recipes can include a satisfying breakfast casserole! Best of all, frozen tater tots make it super easy! I like the natural sweetness of sweet potato tots, but original tater tots may be used as well.

- 1 pound frozen sweet potato crisp bite size puffs tater tots
- 1 package Canadian bacon diced, 6-ounce
- 1 onion chopped
- 1 green bell pepper seeded and chopped
- 1 1/4 cups shredded reduced-fat sharp Cheddar cheese
- 4 eggs
- 3 egg whites
- 1/2 cup skim milk
- salt and pepper to taste

- In 3 1/2-6-quart slow cooker, insert plastic liner, if desired. Depending on size of slow cooker, layer tater tots, Canadian bacon, onion, green pepper and cheese two or three times.
- In bowl, whisk together eggs, egg whites and milk. Season to taste. Pour egg mixture over layers in slow cooker. Cook on LOW 5-8 hours or until egg mixture is set.
