I understand the demand for gluten-free recipes for health reasons and I also know how busy everyone is.  I included some of the best easy chicken enchilada recipes on my healthy food blog.  In my arthritis cookbook I have lots of gluten-free recipes.  These gluten free chicken enchiladas and many other everyday favorites.

I keep cooking easy! I highlighted the gluten-free recipes with a “G” for your quick reference. Sometimes with slight changes you can turn recipes into gluten-free. I did that with my healthy chicken enchiladas recipe.  It was as easy as using corn tortillas instead of flour tortillas.  Presto! You get gluten free chicken enchiladas.

 

Easy Chicken Enchiladas from Holly Clegg’s trim&TERRIFIC Eating Well to Fight Arthritis

An easy ‘combine and stir’ enchilada recipe with green enchilada sauce and a creamy chicken filling makes scrumptious green chicken enchiladas recipe. Rotisserie chicken simplifies cooking! These green chili enchiladas are a nice change if red sauce bothers you.

12 enchiladas

6 ounces reduced-fat cream cheese
3 cups chopped, cooked chicken breasts
1 (4-ounce) can chopped green chilies
1 (28-ounce) can green enchilada sauce, divided
1 teaspoon chili powder
1 cup chopped green onion
12 (8-inch) flour tortillas (corn tortillas for gluten-free)
1 (15-ounce) can black beans, rinsed and drained
1 1/2 cups reduced-fat shredded Mexican blend cheese, divided
Chopped green onion, garnish

1. Preheat oven 350°F. Coat oblong 3-quart baking dish with nonstick cooking spray.
2. In microwave-safe dish, microwave cream cheese until melted or about 1 minute. In bowl, combine melted cream cheese, green chilies, 2 cups enchilada sauce, chili powder, and green onion.
3. Pour 1/2 cup remaining enchilada sauce in prepared baking dish. Spoon about 1/3 cup chicken mixture in each tortilla, some black beans and 1 tablespoon cheese. Roll up and place seam-side down in prepared baking dish. Repeat with remaining tortillas and top with remaining enchilada sauce.
4. Cover with foil.  Bake 25-30 minutes or until hot. Sprinkle with remaining cheese and return to oven until cheese melts or about 5 minutes. Sprinkle with green onions, if desired.

Did you know if you rinse and drain your beans you reduce the sodium significantly? You might save your colander for pasta but there’s so many other uses! This is the colander I use in my own home, and I like it because it is the perfect size.  Also, if you don’t have storage space it is collapsible for easy storage.

Remember to always rinse and drain any canned beans.  I use canned beans for convenience. Beans are great to add fiber making  my green chicken enchiladas healthy.
