I am doing some menu planning and a few weeks ago I included this healthy peanut butter cookie recipe in the weekly menu. When I asked how everything was going, she said she makes this diabetic Peanut Butter Cookie weekly. Everyone loves this cookie!! I told you my easy peanut butter cookie recipe had only 5 ingredients and is for a peanut butter cookie without flour! Best of all, they are healthy peanut butter cookies and gluten-free peanut butter cookies!! OK, another admission that many of you probably already know. I eat cookies from my freezer every night. I limit myself to two cookies, most of the time. So, when I am making a batch of these diabetic peanut butter cookies, I usually double or triple this healthy peanut butter cookie recipe to fill up my freezer (after all they are better for you). My easy Peanut Butter Cookies from KITCHEN 101 cookbook truly are my favorites! I always keep cookies in my freezer.
Easy Peanut Butter Cookie For Diabetics and Everyone’s Favorite Simple Cookie Recipe!
Servings 30 cookies |
- 1 cup crunchy peanut butter
- 1/2 cup light brown sugar
- 1 egg
- 1/2 teaspoon baking soda
- 1/4 cup chopped peanut
Ingredients

- Preheat oven 350°F. Coat baking sheet with nonstick cooking spray.
- In large bowl, combine the peanut butter, sugar, egg, and baking soda until well combined. Stir in peanuts.
- Place dough by teaspoonfuls on nonstick baking sheet and press down with a fork to form ridges. Bake for 12–14 minutes or until lightly browned.

Terrific Tidbit: Use a lightly floured fork to keep these healthy peanut butter cookies from sticking to the cookie batter when you make the ridges in the cookies. For a peanut butter cookie without flour, do not use flour and press fork carefully to make ridges.

I don’t understand. You call it “DIABETIC peanut butter cookies”, but you’re using brown sugar? What makes it diabetic-friendly?

Hi Joe-great question! When I did my cookbook with the ADA, they said it is ok to use sugar as long as the recipes fit into the diabetic guidelines which are about sodium, fat and and carbs. They have to meet those guidelines. Just because a recipe includes or doesn’t include sugar doesn’t make it automatically diabetic. Eating diabetic is the healthiest way to eat and can be a part of an everyday diet with healthy choices. If someone wants to substitute a sugar substitute, it will change the nutritional profile of the recipe. I hope this answers your question.
