Foods Good For Diabetics and Healing Power of Food

My focus has always been about good health and a healthy lifestyle.  I get asked all the time about foods good for diabetics or easy diabetic recipes for people living with diabetes.  How to heal with food is a hot topic!  It is a top priority for you. It is for me too.  I create simple diabetic living recipes like my simple chicken curry recipe from KITCHEN 101 cookbook!  There is a healing power of food and what you eat can make a difference.  I create delicious recipes what’s great about KITCHEN 101 cookbook is it highlights easy diabetic recipes. I love sharing my message and helping other people feel good, be healthy and learn the healing power of food.

As you have heard me say before, there is no magical diabetic diet to follow and a diabetic meal plan is really the healthiest way to eat.  My focus on diabetic living recipes is apparent in my cookbooks.  I highlight my easy diabetic recipes with the ADA guidelines with a “D” for easy reference.  Best of all, you don’t have to change what you eat but just how you prepare the food.  Yes, you can heal with food and we know there is a direct correlation with our diet and our health. My Simple Chicken Curry Recipe Great Diabetic Living Recipe

With less than ten ingredients and quick to prepare, you can add this to foods good for diabetics. Also, healing with food is important. Did you know you can reduce your risk of diabetes by 10% just cooking at home? This simple Chicken Curry Recipe includes powerhouse foods for living with diabetes.  You know spinach is loaded with healthy nutrients by the rich color green; boasting powerful antioxidant protection.  Add it to any dish you can – even smoothies! If a recipe calls for 1 cup of spinach add more.  The more veggies you can include the better.  I also prefer fresh baby spinach as the leaves are more tender.

Chicken Curry with Spinach and Tomatoes
A simple chicken curry recipe from my anti-inflammatory diet cookbook with a combination of curry, coconut milk and tomato packs tremendous flavor into this sensational chicken dish makes this food good for diabetics.  Serve over rice.
Servings 8 servings
Ingredients
  • 2 pounds boneless, skinless chicken breasts
  • 2 teaspoons ground curry
  • salt and pepper to taste
  • 1/2 cup chopped onion
  • 1 teaspoon minced garlic
  • 1 (14-ounce) can lite coconut milk
  • 1 (14 1/2-ounce) can diced tomatoes drained
  • 3 cups packed baby spinach
Servings 8 servings
Ingredients
  • 2 pounds boneless, skinless chicken breasts

Instructions
  1. Season chicken with curry and with salt and pepper.

  2. In large nonstick pan coated with nonstick cooking spray, brown chicken breasts on both sides, 5-7 minutes. Add onion and garlic, and continue sautéing 5 minutes, stirring.

  3. Add coconut milk and tomatoes, bring to boil, reduce heat and cook about 15-20 minutes or until chicken is tender. Add spinach, and cook until wilted, about 2 minutes.
