Pizza Rice is a one of those great kid side dishes to introduce your kids to brown rice, an easy way to boost your fiber. Did you know that 1 cup brown rice has 3 1/2 grams fiber and white rice has less than 1 gram? With all the characteristics of a pizza, you won’t have to call the kids twice to the table, but also, don’t count out the adults! - 1 small green pepper, chopped
- 1 (14-ounce) can diced fire-roasted tomatoes with juice
- 1 (.7-ounce) package Italian salad dressing mix
- 4 cups cooked brown rice
- 1 cup shredded part-skim mozzarella cheese
Ingredients

- In medium nonstick pot coated with nonstick cooking spray, saute green pepper until tender. Add tomatoes and Italian dressing, stirring until mixed and well heated.
- Stir in cooked rice and cheese. Cook over low heat until well heated and cheese is melted, about 3- 5 minutes.
