Make-Ahead Brunch Recipes Freeze For Perfect Southern Brunch!

I LOVE brunch! It’s one of my favorite meals and especially if you use my easy make ahead brunch recipes.  Whenever all my kids are in town, I prepare a southern brunch with my easy brunch recipes. Of course, I have my go to recipes like my Shrimp and Cheese Grits from my Gulf Coast Favorites cookbook for such a wonderful make ahead breakfast recipe.  Or, sometimes I make the Shrimp and Peppers over Cheese Grits from Eating Well To Fight Arthritis cookbook. Shrimp and Grits always make my menu so you see why I told you this post had a focus on southern brunch recipes!



My Easy Brunch Recipes From Entrees To Extras For Easy Brunch Menu

Easy to prepare crawfish or shrimp with cheesy seasoned grits and ham is an easy fulfilling breakfast and southern brunch recipe. I count on serving this any time I have a family get together which is usually for an Easter Brunch or Mother’s Day brunch. It is truly one of my favorite make ahead brunch recipes. Since this is the time of year for Louisiana crawfish, here in south Louisiana I sometimes substitute crawfish or use a combination.

Shrimp and Grits from Gulf Coast Favorites

Makes 4-6 servings

1 cup quick grits
3 cups water
1/2 cup skim milk
1 1/2 cup shredded reduced-fat sharp Cheddar cheese, divided
1/4 cup freshly grated Parmesan cheese
1/2 teaspoon paprika
Dash cayenne pepper
1/3 cup diced Canadian bacon
1 pound medium peeled shrimp or Louisianan crawfish tails
1 teaspoon minced garlic
1/2 pounds mushrooms, optional
1 tablespoon lemon juice
Salt and pepper, to taste
1/2 cup chopped green onions

1. Cook grits in water and milk according to package instructions.   When grits are ready, stir in 1 cup Cheddar cheese, Parmesan cheese, paprika, and cayenne and stir until cheese is melted.
2. Coat large nonstick skillet with nonstick cooking spray and add Canadian bacon and sauté until it begins to brown. Next, add shrimp, garlic and mushrooms if using.  Cook, stirring, until shrimp are fully pink and almost done, 3-5 minutes. Add lemon juice.
3. Remove from heat and stir in grits mixture. Season to taste. Add green onions..
4. Preheat the oven to 350°F  Coat 2-quart casserole dish with nonstick cooking spray. Transfer grits and shrimp mixture to prepared dish. Sprinkle with remaining 1/2 cup Cheddar cheese and bake 30 minutes, covered, or until heated through.

Fondest Memory Of My Southern Brunch Recipes For My Daughter’s Debutante Party For Friends from Out of State

 

My easy make ahead brunch recipes may be doubled to serve a crowd. One of my fondest memories is when my daughter was a debutante. and I had 30 kids staying at my house. I prepared a southern brunch and used 7 pounds of shrimp. They ate it all.

For me it is crucial choosing make ahead brunch recipes that I can prep the night or day. Then, I can enjoy all of the holiday morning fun. Who doesn’t love French toast for brunch?  Even though it’s one of our family favorites, I don’t like standing over the stove cooking one piece at a time.  This Mother’s Day Brunch I want everyone to enjoy eating together and that’s why I am giving you a make ahead brunch menu. My Oven Baked French Toast from Eating Well To Fight Arthritis comes the rescue with a make ahead French toast Casserole.  With French bread, reduced fat cream cheese and a scrumptious blackberry jam (you can leave out or select your favorite jam), I can’t await for you to try this divine combination!

I love quick breads because who doesn’t like a slice of moist Banana bread or this Chocolate Zucchini Bread from Gulf Coast Favorites to serve with whatever you are making for brunch.  Yes, quick breads are super easy make ahead brunch recipes.  What’s great about this recipe is you will get all the chocoholic’s attention and you’re sneaking in nutritious zucchini.  I can’t even count how many times I turned to my Chocolate Zucchini Bread recipe in the summer.  Especially, when I had an overflow of fresh garden grown zucchini (that people gave me). I love this recipe because it uses cocoa and chocolate chips. Rich in chocolate and the bread is still trim and terrific!

Yummy Yam Praline Coffee Cake from Gulf Coast Favorites

Another favorite that’s not really a quick bread but made with Bisquick is my Yummy Yam Coffee Cake.  Honestly, this recipe is my personal favorite and I have no will power.

Whichever sweet treat you include in your Mother’s Day brunch, either of this can be made ahead of time and are so amazing!
