- 4 sweet potatoes peeled
- 2 tablespoons olive oil
- salt and pepper to taste
- chopped parsley optional
Ingredients

- Preheat oven 400°F. Coat baking sheet with nonstick cooking spray or line with foil.
- Cut sweet potatoes into 1/2-inch thick lengthwise strips, toss with oil. Arrange in single layer on baking sheet, bake 15–20 minutes.
- Turn potatoes over, bake 15–20 minutes or until golden brown all over. Season to taste, sprinkle with parsley.
