- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 cup skim milk
- 1/2 cup butterscotch chips
- 1/2 cup chopped pecans optional

Instructions
- Preheat oven to 350°F. Coat non-stick 9 x 5 x 3-inch loaf pan with non-stick cooking spray.
- In large bowl, beat together oil and brown sugar. Add eggs, bananas, and vanilla, stirring well.
- In another bowl, combine flour, baking soda, baking powder, and cinnamon. Gradually combine dry ingredients and milk with banana mixture, stirring only until combined.
- Pour batter into prepared loaf pan and bake 45 -50 minutes or until a toothpick inserted in center comes out clean.
