Hacienda Chicken
Easy and effortless, chicken with a smoky cumin seasoning in a simple salsa sauce makes a quick, flavorful nightly dinner. Freezer friendly, Diabetic
Prep Time 5 minutes
Cook Time 30 minutes
Servings 4 servings
Ingredients
  • 1 1/2 pounds boneless skinless chicken breasts
  • 1 tablespoon ground cumin
  • 1 onion thinly sliced
  • 1 cup picante sauce or salsa
  • 1/2 cup plain fat-free Greek yogurt
  • 1 tablespoons all-purpose flour
  • 1/2 cup chopped green onion
Prep Time 5 minutes
Cook Time 30 minutes
Servings 4 servings
Ingredients
  • 1 1/2 pounds boneless skinless chicken breasts

  • 1 cup picante sauce or salsa
  • 1/2 cup plain fat-free Greek yogurt
  • 1 tablespoons all-purpose flour
  • 1/2 cup chopped green onion
Instructions
  1. Sprinkle chicken with cumin. In large nonstick skillet coated with nonstick cooking spray, brown chicken on both sides. Top with sliced onions and picante sauce.
  2. Cook, covered, over medium-low heat 25-30 minutes or until chicken is tender.
  3. In small bowl mix yogurt and flour. Lower heat and gradually add yogurt to pan, heating but do not boil. Sprinkle with green onions.

Terrific Tip: Pick different flavored salsas to switch up the flavor.
