Peanut Butter Cookies
These simple ingredients whip up instantly into healthy peanut butter cookies.  That's a 5-ingredient easy peanut butter cookie for diabetics that melts in your mouth! Also, this recipe is for a peanut butter cookie without flour! 2 Weight Watcher Points Plus.  
Servings 30 cookies
Ingredients
  • 1 cup crunchy peanut butter
  • 1/2 cup light brown sugar
  • 1 egg
  • 1/2 teaspoon baking soda
  • 1/4 cup chopped peanut

  • 1/2 teaspoon baking soda
  • 1/4 cup chopped peanut
Instructions
  1. Preheat oven 350°F. Coat baking sheet with nonstick cooking spray.

  2. In large bowl, combine the peanut butter, sugar, egg, and baking soda until well combined. Stir in peanuts.

  3. Place dough by teaspoonfuls on nonstick baking sheet and press down with a fork to form ridges. Bake for 12–14 minutes or until lightly browned.

Terrific Tidbit: Use a lightly floured fork to keep these healthy peanut butter cookies from sticking to the cookie batter when you make the ridges in the cookies. For a peanut butter cookie without flour, do not use flour and press fork carefully to make ridges.
