Southern Okra Succotash

Southern Okra Succotash
This is the best succotash recipe ever and makes a quick veggie side.
Servings 8 (1/2-cup) servings
Ingredients
  • 1 tablespoon olive oil
  • 1 pound fresh or frozen cut okra
  • 1 cup corn
  • 1 can diced tomatoes and green chilies 10-ounce
  • 1 can white navy beans rinsed and drained, 15-ounce
  • salt and pepper to taste

  • 1 cup corn
  • 1 can diced tomatoes and green chilies 10-ounce
  • 1 can white navy beans rinsed and drained, 15-ounce

Instructions
  1. In nonstick skillet, heat oil over medium heat and stir-fry okra several minutes. Add remaining ingredients and mix well.
  2. Cook, covered, over low heat 15 minutes or until okra is tender and stir occasionally. Season to taste.

Terrific Tip: Here’s another easy okra recipe. Microwave whole okra in shallow dish with 3 tablespoons seasoned rice vinegar. Next, add 1 tablespoon canola oil and cook, covered, 4–5 minutes or until tender.
