Watermelon Cantaloupe Fruit Salad

Do you get tired of the same mixed green salads?  Why not take advantage of seasonal juicy watermelon for this light and refreshing Watermelon Cantaloupe Fruit Salad from Guy’s Guide To Eating Well! There’s all kinds of fruit salads, but I think it is hard to beat this melon fruit salad.  Invigorating with the combination of melons combined with fresh mint and basil and a touch of feta for the ultimate melon feta salad. You can use only watermelon if desired for a Watermelon Feta Mint Salad Recipe.

Take Short Cuts with Melon Fruit Salad

With precut watermelon and cantaloupe, this Watermelon Cantaloupe Fruit Salad whips up quickly but a melon baller is actually very easy to use! Fresh mint really makes a difference in this melon feta salad. However, if you don’t have fresh mint or basil, you can find both in packages at the grocery.  I do think the fresh mint is a must, but you can use dried basil or leave it out if you want. I always say make cooking convenient on yourself.

Watermelon and Cantaloupe Salad
You will enjoy my easy diabetic recipe for a melon salad, Watermelon and Cantaloupe Salad, because it makes a tasty soothing light meal and that is the best sore throat treatment with food. Cool crisp watermelon, refreshing cantaloupe, and fresh basil create an extraordinary and invigorating gluten-free fresh melon salad. Make this salad the night before and that gives the flavors time to meld together. Watermelon and cantaloupe also have immune-boosting carotenoid antioxidants and that makes this delicious melon salad so good for you.
Servings 6 (1/2 cup) servings
Ingredients
  • 2 cups watermelon small chunks or balls
  • 1 cup cantaloupe small chunks or balls
  • 2 tablespoons lemon juice
  • 2 tablespoons honey
  • 2 tablespoons chopped fresh mint
  • 1 teaspoon chopped fresh basil or 2 teaspoons dried basil leaves
  • salt and pepper to taste
  • 1/4 cup reduced-fat feta cheese
Servings 6 (1/2 cup) servings

Instructions
  1. In large bowl, combine watermelon and cantaloupe.

  2. In small bowl, mix together lemon juice, honey, mint and basil. Season to taste. Toss with watermelon mixture and refrigerate until serving. Add feta to melon salad right before serving
