What You Can Do for Cancer Prevention! Try My Best Kale Salad Recipe
I believe that everyone should do what they can for cancer prevention. One of the Mayo Clinic’s seven tips to reduce your risk of cancer is to get adequate medical care. So, I always get my colonoscopy, as my mother had colon cancer 25 years ago. There are things we can do! Cancer prevention is important and so are the foods you eat. Whether you have a family history or not, at a certain age, you should have a colonoscopy. No, it isn’t fun, pleasant or enjoyable but we all get through it. Get the testing out of the way but focus on good cancer prevention recipes like my best kale salad recipe year round.

- 8 cups chopped kale center ribs and stems removed
- 1 cup shredded red cabbage
- 1 apple nectarine or fruit of choice chopped
- 1/3 cup chopped pecans toasted
- Fruity Vinaigrette
Ingredients

- In large salad, toss together kale, cabbage, fruit and pecans. Toss with Fruity Vinaigrette (see recipe).

- 3 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1/4 cup apricot preserves
- 2 tablespoons lemon juice
- 1 teaspoon dijon mustard

Mini Whisk Perfect To Make Fruity Vinaigrette in Kale Salad Recipe
Don’t laugh but I LOVE a mini wire whisk. Perfect size to whisk together a vinaigrette in a small cup. Have you ever found your big whisk won’t even fit into a small cup and you need to make the vinaigrette. And, talk about inexpensive.
If you don’t have a big whisk, pick up one of those also but I promise you will end up using this mini whisk more than you think.

I love kale. It’s a marvellous vegetable for my as a nutritionist and cook. Thanks for another recipe. Eating a lot of vegetables and fruits provides fibre and antioxidants that lower the risk of colon cancer. Very important are probiotics too. This salad would be even better for health if you use yogurt for dressing.
