Add Healthy Carrot Cake Recipe to Your Menu
If you have never made my healthy Carrot Cake recipe with easy Cream Cheese Frosting from Eating Well to Fight Arthritis cookbook, then stop what you are doing and put it on your menu! I am a huge carrot cake fan and my moist Carrot Cake Bars are a must when looking for a mouth-watering dessert. Don’t be intimidated to whip up this classic sweet treat and if you ever wondered how to make cream cheese icing, look no further! I just included this recipe on my WBRZ Noon Show Cooking segment for Holly’s Holiday Countdown because I was craving carrot cake! - 2 eggs slightly beaten
- 1 cup light brown sugar
- 1/4 cup canola oil
- 1/3 cup orange juice
- 1 teaspoon vanilla extract
- 2 cups shredded carrot
- 1/2 cup pecans or walnuts chopped
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- Cream Cheese Frosting
Ingredients

- Preheat oven 350°F.
- Coat 13x9x2-inch baking pan with nonstick cooking spray.
- In large bowl, whisk together eggs, brown sugar, oil, orange juice, and vanilla. Stir in carrot and pecans.
- In another bowl combine flour, baking powder, baking soda, cinnamon, and ginger. Add to carrot mixture; stirring just until combined. Spread batter into prepared pan.
- Bake 17-20 minutes or until a toothpick inserted in center comes out clean. Cool completely and ice with Cream Cheese Frosting (see recipe).

- 1 8-ounce package reduced-fat cream cheese softened
- 3 tbsp butter
- 1 16-ounce box confectioners’ sugar
- 1 tsp vanilla extract

- In a mixing bowl, beat cream cheese and butter until smooth. Add confectioners’ sugar and beat until light. Add vanilla.

The Carotenoid antioxidants, are naturally occurring pigments that are mostly responsible for the color red, yellow, and orange in fruits and vegetables. These powerful antioxidants are found to have anti-cancer, anti-oxidant, and immune boosting properties. You have a good-for-you healthy carrot cake, one of my very favorite desserts.
Where Did Carrot Cake Bars Come From?
It is believed that the history of what we know of as the healthy carrot cake recipe came from Medieval times and looked more like a carrot pudding. It is unsure how exactly carrot pudding turned into cake but we do know that during the middle ages sugar was expensive and hard to come by so carrots were used as a sweetener in cakes and baked goods. Today we combine Carrot Cake Bars with this easy Cream Cheese Frosting and it couldn’t be sweeter!
