No Bake Sweet Treat Keeps the Oven Off

This is the perfect creamy, berrilicious treat.  Best of all, this no bake dessert keeps the oven off! Turn into a strawberry cheesecake parfait and layer the ingredients in individual servings. This is an easy make-ahead healthy cheesecake dessert. Keep these everyday ingredients in your kitchen to make this perfect last minute sweet treat. With fresh strawberries, buttery graham cracker crumbs, whipped topping  and a creamy filling assembled in whatever container you’d like, it is a great dessert that requires no heat at all, making it a perfect, pretty recipe to make on a hot summer day.

Strawberry Cheesecake Parfait
This fabulous no bake strawberry cheesecake dessert is also a healthy cheesecake recipe in one fabulous indulgence! For Weight Watchers, this strawberry cheesecake has 8 Weight Watcher SmartPoints.
Servings 8 parfaits
Ingredients
  • 1 pound strawberries stemmed and sliced
  • 1 tablespoons sugar
  • 1 reduced-fat cream cheese 8-ounce
  • 1/2 cup plain or vanilla nonfat Greek yogurt
  • 1/2 cup confectioners’ sugar
  • 1 teaspoon almond extract
  • 1 1/2 cups frozen nonfat whipped topping thawed, divided
  • 2/3 cup graham cracker crumbs
  • Mint garnish, optional
Servings 8 parfaits
Ingredients
  • 1 pound strawberries stemmed and sliced
  • 1 tablespoons sugar
  • 1 reduced-fat cream cheese 8-ounce
  • 1/2 cup plain or vanilla nonfat Greek yogurt
  • 1/2 cup confectioners’ sugar
  • 1 teaspoon almond extract
  • 1 1/2 cups frozen nonfat whipped topping thawed, divided
  • 2/3 cup graham cracker crumbs
  • Mint garnish, optional
Instructions
  1. In bowl, sprinkle strawberries with sugar and toss. Set aside.
  2. In mixing bowl, beat cream cheese, yogurt, confectioners sugar and almond extract until smooth. Fold in 1/2 cup whipped topping.
  3. To assemble parfaits, in small dish or glass, layer graham cracker crumbs, cream cheese filling, and strawberries. Repeat layers if small enough dish.  Then, top with dollop of whipped topping. Garnish with mint, if desired.

We made this easy no bake strawberry cheesecake with strawberries but any berry combination is fine. Luckily, you can find fresh strawberries year round and not only during strawberry season. When a recipe calls for either plain yogurt or Greek yogurt, you can use either but Greek is richer, creamier and thicker.  Also, Greek yogurt has more health benefits too as it is often higher in protein and lower in sugar.
