If you’re not even sure what risotto is, let’s start there. Risotto is a popular northern Italian rice dish cooked in a broth on top the stove until creamy.  Then, you can add whatever you want to the risotto recipe.  This is one of my go to quick healthy easy recipes. What Kind of Rice Do you Use for Oven Baked Risotto recipe?

Yes, you do need a special rice to cook risotto.  Sometimes in the groceries it is just called risotto or you might find it called Arborio rice.  Arborio rice is often used to make risotto as it undergoes less milling, keeping more of its starch content, making it creamy in texture. You will find the rice both ways and either works fine.

This oven baked risotto recipe also really makes a quick chicken risotto recipe.  Remember, risotto is usually made standing over the stove stirring until the rice gets a creamy consistency.  Then, you add your other ingredients.  My recipe works the same way.  Prepare the Oven Baked Risotto recipe according to directions. As you know all my recipes include nutritional information and diabetic exchanges.  This Oven Risotto recipe is diabetic in the side portion servings.  I have the nutritional analysis both ways –as an entree and as a side. No time consuming stirring to whip up this scrumptious Oven Baked Risotto recipe

Serve as a side or entree.

Makes 5 (1-cup) entrees or 10 (1/2-cup) side servings

2 tablespoons butter, melted
2 1/2 cups low-sodium fat-free chicken broth
1 cup Arborio rice
1 cup chopped onion
Salt and pepper to taste

1. Preheat oven 400 F°
2. In 13x9x2-inch baking dish, mix together butter, broth, rice, onion and season to taste. Bake, covered, 35 minutes. Remove from oven and fluff rice with fork.

Terrific Tip: For a heartier delicious option, after oven risotto is cooked, add fresh mozzarella, tomatoes, fresh basil and chicken.
