Brie Lovers Rejoice
Brie lover? You are about to be. This Roasted Tomato and Brie Pasta really cranks up the flavor. This mouth-watering pasta dish is from the Ready-Made Menus chapter of Holly’s KITCHEN 101 cookbook. It is specifically in the Meatless Meals Menu as it is an amazing Vegetarian option, and freezer friendly too. Choosing nutrition-rich meatless meals has been shown to be a good way to help heart health and good for the budget!
Servings 6 (1-cup) servings |
- 12 ounces spiral pasta
- 3 tablespoons olive oil
- 1 can diced fire-roasted tomatoes or roasted tomatoes 14 1/2-ounce, see recipe
- 2 cup teaspoons dried basil leaves or 1/4loosely packed fresh basil chopped
- 1 teaspoon minced garlic
- 1/2 cup cubed Brie rind removed
- 1/4 cup sliced almonds toasted
- salt and pepper to taste

- Cook pasta according to package directions: drain.
- In large nonstick skillet, heat oil and add tomatoes, basil and garlic to skillet. Add Brie, stirring until just begins to melt.
- Transfer Brie mixture to pasta, add almonds and carefully toss together. Season to taste.

- 3 cups coarsely chopped fresh tomatoes
- 2 tablespoons olive oil
- 1 tablespoon teaspoon dried basil leaves or 1fresh basil
- salt and pepper to taste

- Preheat oven 425°F. Line baking sheet with foil.
- On prepared pan, combine tomatoes, oil, basil and season to taste. Roast 25-30 minutes or until done and slightly blackened.

Terrific Tip: Try using roasted fresh tomatoes for the canned (see recipe). If roasting fresh tomatoes, use 2 tablespoons olive oil in cooking and 1 tablespoon olive oil roasting tomatoes.
