This easy succotash recipe is a year round recipe.  However, I think of it more in the summer when I see fresh okra. One grocery trip I saw fresh okra and had the other ingredients already at home. I knew it was okra season and nothing beats our good southern food!

What is succotash?  The official food description is a stir-fry with corn, lima beans and other shelled beans. Everyone adds other ingredients to this popular southern succotash recipe.  You can add tomatoes, green or red peppers, and okra. Cooking is creative and everyone has their favorite ingredients.  My philosophy is if you don’t have or like an ingredient, then leave it out! Succotash is one of those recipes you can add extra seasonings and veggies. My Easy Succotash Recipe Makes Best Summer Succotash!

Have you ever made succotash? I created a simple 5 ingredient recipe! Fresh is always best, however, sometimes I use frozen corn and canned ingredients.  Either way, this easy succotash recipe is quick cooking. I wanted succotash.  So, I raided my pantry one evening and made this fantastic easy southern succotash recipe. It’s a one-skillet dish recipe with great flavor. Remember, I test all my recipes! This is the best succotash recipe ever and makes a quick veggie side.

Makes 8 (1/2-cup) servings

1 tablespoon olive oil
1 pound fresh or frozen cut okra
1 cup corn
1 (10-ounce) can diced tomatoes and green chilies
1 (15-ounce) can white navy beans, rinsed and drained
Salt and pepper to taste

1. In nonstick skillet, heat oil over medium heat and stir-fry okra several minutes. Add remaining ingredients and mix well.
2. Cook, covered, over low heat 15 minutes or until okra is tender and stir occasionally.  Season to taste.

Terrific Tip:  Here’s another easy okra recipe. Microwave whole okra in shallow dish with 3 tablespoons seasoned rice vinegar.  Next, add 1 tablespoon canola oil and cook, covered, 4–5 minutes or until tender.
