Green Velvet Cake
Perfect for Christmas, Valentine’s Day, or any special occasion, this southern classic Easy Red Velvet Cake recipe - turned green - never goes out of style. Take a short cut with my Red Velvet Cake with Cream Cheese Icing by using cake mix to effortlessly prepare a beautiful and deliciously rich lusciousus Green Velvet cake.
Servings 16-20 servings
Ingredients
  • 1 18.25-ounce box yellow cake mix
  • 2 tbsp cocoa
  • 1/4 cup canola oil
  • 1 egg
  • 1 1-ounce bottle green food coloring
  • 3 egg whites
  • 1 cup skim milk
  • 1 tbsp vinegar
  • Cream Cheese Icing
Servings 16-20 servings
Ingredients
  • 1 18.25-ounce box yellow cake mix
  • 2 tbsp cocoa
  • 1/4 cup canola oil

Instructions
  1. Preheat oven 350ºF. Coat three 9-inch round cake pans with nonstick cooking spray.
  2. In mixing bowl, combine cake mix, cocoa, oil, egg, egg whites, food coloring. In small bowl, combine milk and vinegar, add to mixing bowl. Mix until well combined.
  3. Pour batter into prepared pans, bake 15–20 minutes or until a toothpick inserted comes out clean. Cool layers on a rack, ice with Cream Cheese Icing.

  • 3 tbsp butter
  • 1 16-ounce box confectioners’ sugar
  • 1 tsp vanilla extract

Instructions
  1. In a mixing bowl, beat cream cheese and butter until smooth. Add confectioners’ sugar and beat until light. Add vanilla.

Frozen Pistachio Pudding Pie
These few ingredients create a simple refreshing indulgent pistachio pudding dessert recipe with hot fudge. I love making light desserts using pistachio pudding recipes and especially this indulgent Pistachio Pudding Pie recipe.

Ingredients
  • 1 1/2 cups chocolate graham crackers crushed
  • 3 tbsp butter melted
  • 1/4 cup pistachios chopped
  • 1 quart fat free vanilla ice cream or frozen yogurt fat free vanilla ice cream or frozen yogurt
  • 1 (4-serving) instant pistachio flavored pudding and pie filling
  • 1/2 cup chocolate fat-free fudge topping warmed

  • 1 1/2 cups chocolate graham crackers crushed
  • 3 tbsp butter melted
  • 1/4 cup pistachios chopped
  • 1 quart fat free vanilla ice cream or frozen yogurt fat free vanilla ice cream or frozen yogurt
  • 1 (4-serving) instant pistachio flavored pudding and pie filling
  • 1/2 cup chocolate fat-free fudge topping warmed
Instructions
  1. Preheat oven 375°F.
  2. In 9-inch pie plate, stir together graham cracker crumbs, and butter, press on bottom and up sides. Bake 8 - 10 minutes. Cool completely.
  3. Meanwhile, in a large bowl, quickly combine the pistachios, ice cream, and pudding until well mixed. Transfer mixture into cooled crust. Freeze, covered, for at least 4 hours or until firm.  Serve with warmed chocolate fudge topping on each slice.
