Meat Sauce Bolognese

Meat Sauce Bolognese
The term “Bolognese” means a thick, full-bodied meat sauce with vegetables enhanced with wine or milk—I have used both to create my husband’s favorite meat sauce.
Prep Time 15 minutes
Cook Time 45 minutes
Servings 8 (1-cup) servings
Ingredients
  • 2/3 cup chopped carrots
  • 2/3 cup chopped celery
  • 1 onion chopped
  • 2 tablespoons minced garlic
  • 2 pounds ground sirloin
  • 1 can tomato paste 6-ounce
  • 1 can fat-free beef broth 14-ounce
  • 1 cup red wine
  • 1 in can diced roasted tomatoesjuice 14 1/2-ounce
  • 1 teaspoon dried basil leaves
  • 1 teaspoon dried oregano leaves
  • 1 cup skim milk

  • 1 cup red wine

  • 1 teaspoon dried basil leaves
  • 1 teaspoon dried oregano leaves
  • 1 cup skim milk
Instructions
  1. In large nonstick skillet, cook carrots, celery, onion, and garlic and sauté 7 minutes or until tender. Add meat, stirring until brown.
  2. Add tomato paste, beef broth, red wine, tomatoes, basil, and oregano. Bring to boil and cook 5 minutes. Add milk and continue cooking over low heat 20-30 minutes.

Nutrition Nugget: Beef is rich in a well-absorbed form of iron which helps your body use oxygen efficiently and prevents anemia.

Serving Suggestion: Serve over pasta like angel hair to soak up the rich sauce. Red wine is an ingredient in the sauce but it also pairs exceptionally well with the meal.

Terrific Tip: Keep it gluten-free and use spaghetti squash as noodles.
