Crunchy Fruity Coleslaw
A bag of pre-shredded cabbage makes for effortless preparation of a vibrant, crowd-pleasing salad, packed with sweet a savory ingredients.
Servings 10-12 servings
Ingredients
  • 4 cups shredded green cabbage
  • 4 cups shredded red cabbage
  • 1 red bell pepper cored and thinly sliced into 1-inch pieces
  • 2/3 cup chopped dried apricots
  • 1 1/2 cups frozen corn thawed
  • 1 bunch green onions chopped
  • 1/4 cup slivered almonds toasted
  • 2 tablespoons sesame seeds toasted
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey
  • 2 tablespoons canola oil
  • 1 teaspoon minced garlic
Servings 10-12 servings

Instructions
  1. In large bowl, combine green and red cabbage, red pepper, apricots, corn, green onions, almonds, sesame seeds.
  2. In small bowl, whisk together remaining ingredients. Toss with salad, mix well.
