Deliciously Easy Single Serving Frozen Pizza

Chicken Pesto Personal Pizzas from Holly Clegg’s Too Hot in the Kitchen cookbook make excellent individual lunches, dinner, and who doesn’t love cold pizza for breakfast?! Easy to throw together last minute, add these Mediterranean style ingredients on mini pizza crusts or whole-wheat pitas for a single serving idea. And for a nutritious bonus add any extra veggies you enjoy – kids and adults will have fun adding their own favorite toppings!

Chicken Pesto Personal Pizza
Short on time but want a terrific meal? Go Mediterranean with pizza. Look for pre-made pesto in the grocery.
Servings 1 pizza
Ingredients
  • 2 whole-wheat pitas
  • 2 teaspoons pesto
  • 6 tablespoons shredded part-skim mozzarella cheese
  • 2/3 cup shredded cooked or grilled chicken
  • 2 tablespoons chopped artichoke hearts
  • 2 tablespoons chopped sun-dried tomatoes reconstituted in hot water
  • 2 tablespoons crumbled reduced-fat feta cheese
Servings 1 pizza
Ingredients
  • 2 whole-wheat pitas
  • 2 teaspoons pesto

Instructions
  1. Preheat oven 350°F. Coat baking pan with nonstick cooking spray.
  2. Cover pitas with pesto and layer with remaining ingredients. Place on prepared pan and bake 10-12 minutes or until cheese is melted and pita is crisp.

Chicken Pesto Personal Pizza Recipe from Table for Two Chapter

You know what’s great about this cookbook?  There’s a chapter called, Table for Two in Too Hot in the Kitchen.  This chapter includes all recipes for when you don’t want to cook a large meal for a smaller household! Of course you can always double the recipes in this chapter if you are feeding more.

This is also a Freezer Friendly recipe, so grab a rotisserie chicken from the grocery, make this meal ahead of time, and pull it out when you’re in a time crunch. If freezing to make ahead, wrap in saran wrap before baking and slide into a freezer zip top plastic bag.
