Crock Pot Casseroles

What comes to mind when you think of a casserole –a mixture of last night’s leftover meat, various chopped vegetables, and cream of mushroom soup all mixed together and baked in cookware called a “casserole dish?  Well, not anymore! Once considered a thing of the past, today’s casseroles can be just about anything you want them to be. From breakfast to crock-pots, these casseroles sum up what trim and terrific cooking is all about – the ease of a healthy and delicious one-pot complete meal.

Savory Crock Pot Breakfast Casserole

Nothing says comfort food better than this Breakfast Casserole from Holly Clegg’s Crock Pot Convenience Chapter in KITCHEN 101 – the perfect blend of savory brunch flavors! Wake up and let this cheesy, hearty crock-pot breakfast cook itself. Slow cooker recipes can include a satisfying breakfast casserole! Best of all, frozen tater tots make it super easy! I like the natural sweetness of sweet potato tots, but original tater tots may be used as well.

Crock Pot Breakfast Casserole
Wake up in the morning to this fabulous one-pot breakfast with sweet potato tater tots, ham, onion, and green pepper.
Servings 8 (3/4-cup) servings
Ingredients
  • 1 pound frozen sweet potato crisp bite size puffs tater tots
  • 1 package Canadian bacon diced, 6-ounce
  • 1 onion chopped
  • 1 green bell pepper seeded and chopped
  • 1 1/4 cups shredded reduced-fat sharp Cheddar cheese
  • 4 eggs
  • 3 egg whites
  • 1/2 cup skim milk
  • salt and pepper to taste
Servings 8 (3/4-cup) servings

  • 1 package Canadian bacon diced, 6-ounce
  • 1 onion chopped
  • 1 green bell pepper seeded and chopped
  • 1 1/4 cups shredded reduced-fat sharp Cheddar cheese
  • 4 eggs
  • 3 egg whites
  • 1/2 cup skim milk
  • salt and pepper to taste
Instructions
  1. In 3 1/2-6-quart slow cooker, insert plastic liner, if desired. Depending on size of slow cooker, layer tater tots, Canadian bacon, onion, green pepper and cheese two or three times.
  2. In bowl, whisk together eggs, egg whites and milk. Season to taste. Pour egg mixture over layers in slow cooker. Cook on LOW 5-8 hours or until egg mixture is set.

Terrific Tip: For a vegetarian option, omit Canadian bacon. If desired, when done, you can sprinkle more cheese on top (if you like more cheese).
