I told you my easy peanut butter cookie recipe had only 5 ingredients and is for a peanut butter cookie without flour! Best of all, they are healthy peanut butter cookies and gluten-free peanut butter cookies!! OK, another admission that many of you probably already know. I eat cookies from my freezer every night. I limit myself to two cookies, most of the time. So, when I am making a batch of these diabetic peanut butter cookies, I usually double or triple this healthy peanut butter cookie recipe to fill up my freezer (after all they are better for you). My easy Peanut Butter Cookies from KITCHEN 101 cookbook truly are my favorites! I always keep cookies in my freezer.
How to Make my Peanut Butter Cookies for Diabetics!
To get that classic peanut butter cookie mark on the top of the cookie, all you need to do is use a floured fork. Press the floured fork down on the top of the dough before baking the Diabetic Peanut Butter Cookies. If you want a peanut butter cookie without flour, omit this step. I admit that sometimes my chocolate sweet tooth gets the best of me and I toss in some dark chocolate chips. Dark chocolate is better for you and I love the contrast with the sweet cookie. Now, this still makes healthy peanut butter cookies! Also, some kids don’t like the crunch, so you can leave out the peanuts and even use creamy peanut butter. Whatever way you make these peanut butter cookies for diabetics, everyone wants the recipe.

Easy Peanut Butter Cookies For Diabetics and Everyone’s Favorite Cookie!
Peanut Butter Cookies from KITCHEN 101 cookbook
These simple ingredients whip up instantly into healthy peanut butter cookies. That’s a 5-ingredient easy peanut butter cookie for diabetics that melts in your mouth! Also, this recipe is for peanut butter cookies without flour! 2 Weight Watcher Points Plus.
Makes 30 cookies
1 cup crunchy peanut butter
1/2 cup light brown sugar
1/2 teaspoon baking soda
1/4 cup chopped peanut
1. Preheat oven 350°F. Coat baking sheet with nonstick cooking spray.
2. In large bowl, combine the peanut butter, sugar, egg, and baking soda until well combined. Stir in peanuts.
3. Place dough by teaspoonfuls on nonstick baking sheet and press down with a fork to form ridges. Bake for 12–14 minutes or until lightly browned.

Terrific Tidbit: Use a lightly floured fork to keep these healthy peanut butter cookies from sticking to the cookie batter when you make the ridges in the cookies. For a peanut butter cookie without flour, do not use flour and press fork carefully to make ridges.
