This dessert also holds one of Holly’s favorite “make-it-work” stories. Her mother was making the red velvet cake recipe for a family gathering and the layers fell apart. Holly’s motto is ‘if a chocolate souffle falls, serve it as a chocolate pudding. Never start over!’ She was upset and Holly asked her to grab a trifle bowl, and the outcome was the most popular dessert of the night, Red Velvet Trifle! - 1 18.25-ounce box yellow cake mix
- 2 tbsp cocoa
- 1/4 cup canola oil
- 1 egg
- 3 egg whites
- 1 1-ounce bottle red food coloring
- 1 cup skim milk
- 1 tbsp vinegar
- Cream Cheese Icing
Ingredients

- Preheat oven to 350°F. Coat three 9-inch round cake pans with nonstick cooking spray.
- In a mixing bowl, combine cake mix, cocoa, oil, egg, egg whites, and food coloring. In a small bowl, combine milk and vinegar, and add to mixing bowl. Mix until well combined.
- Pour batter into prepared pans and bake 5–20 minutes or until a toothpick inserted comes out clean. Cool layers on a rack and ice with Cream Cheese Icing.

- 3 tbsp butter
- 1 16-ounce box confectioners’ sugar
- 1 tsp vanilla extract
- few drops green food coloring
