Forget crab cakes once you try this recipe! When it’s crawfish season here every time we go out to dinner, my husband wants boiled crawfish!  My daughter came in town for a wedding this weekend, and I think she ate boiled crawfish three times in just a weekend.  If you live in Louisiana, you live for crawfish season-boiled crawfish with corn and potatoes-it is truly unique to our area. You want to make sure you are buying Louisiana crawfish!  I like the Louisiana crawfish boil, but I truly am more interested in cooking with crawfish tails-and especially when someone peels them for me!  So nice to have extra seasoned crawfish. Now, talk about making a wonderful crawfish cake recipe and I have lots more crawfish recipes!

Move over crab cakes because this is one of my favorite easy crawfish recipe that adds a new slant to an old classic. Outrageously delicious!  If you have never had this easy recipe, guess what?  You’ll adore it and it has 5 Weight Watcher SmartPoints      

Makes 8 Louisiana crawfish cakes
                                                                                         
1 cup saltine cracker crumbs
1 tablespoon Dijon mustard
2 tablespoons light mayonnaise
1 teaspoon hot sauce
1 bunch green onions, chopped
1/3 cup chopped fresh parsley
1/3 cup shredded, reduced-fat sharp Cheddar cheese
1 pound Louisiana crawfish tails, rinsed and drained
Salt and pepper to taste
1 tablespoon olive oil
Flour
Horseradish Sauce (recipe follows)

1. In a medium bowl, carefully combine all ingredients except oil and flour.
2. Cover and chill for 30 minutes, if time permits. Shape into 8 patties.
3. In a large nonstick skillet, heat oil. Lightly dust patties with flour, and cook over medium heat for 3–5 minutes on each side, or until browned.
4. Serve with Horseradish Sauce.

Horseradish Sauce

Quick and easy, this sauce has bite.

1/4 cup nonfat sour cream
2 tablespoons light mayonnaise
1 tablespoon lemon juice
2 tablespoons prepared horseradish
Pinch sugar

1. In a bowl, combine all ingredients. Mix well.
