This delightful spinach salad includes both melons. I used a spinach salad as my foundation and added cucumber with a few other ingredients. Spinach and Melon Salad with Honey Citrus Vinaigrette from Gulf Coast Favorites cookbook
My summer melon salad recipes are refreshing and jam-packed with flavor. Your taste buts get a real thrill! You’ll love this fruity spinach melon salad accented with Maple Pecans. Use the pecans if desired. I included the nutritional information below with and without the pecans. This easy summer salad from my Gulf Coast Favorites cookbook makes a quick watermelon and cantaloupe salad recipe. I like the refreshing flavor and easy preparation, and you will too. You can always make it with one type melon too. Remember to adjust recipes to your preference.
Makes 6 Servings
1 (6-ounce) package fresh baby spinach
1 cup cubed seeded watermelon
1 cup cubed cantaloupe
1 small cucumber, peeled and thinly sliced
½ cup thin red onion slices, halved
Honey Citrus Vinaigrette (recipe below)
Maple Pecans (optional, recipe below)
1. In large bowl, combine all ingredients. Toss with Honey Citrus Dressing and Maple Pecans.
Honey Citrus Vinaigrette
This vinaigrette goes great on fruit and other fruity salads.
2 tablespoons honey
1 tablespoon balsamic vinegar
1 tablespoon canola oil
2 tablespoons orange juice
1 tablespoon lime juice
Salt and pepper to taste
Dash hot sauce
1. In small bowl, whisk together all ingredients.

Simple to make and there’s only two ingredients. Pecans add crunch and sweetness to any salad. Best of all, they are high in antioxidants. So, enjoy on a salad or for a snack. Also, you may toast the pecans without the syrup and put in the salad. Either way, I like nuts in a salad.
1/4 cup pecan halves
1 tablespoon pure maple syrup
1. Preheat oven 375 degrees. Coat baking sheet with nonstick cooking spray.
2. In small bowl, combine pecans and syrup. Spread on prepared pan and bake 10 minutes or until lightly browned.
